Smoked Salmon and Avocado Arepa Filling

I am pescatarian. The only meat I eat is fish/seafood. No pulled pork in these arepas. But that is no loss, as smoked salmon and “Bacon” will do just fine, thank you.

As a vegan I just don’t do bacon. That doesn’t mean I don’t want it! This is my latest take and I think it is very good. Simply thinly slice sweet potatoes, I use the slice blad on a grater, and then soak for a few hours in: 1 tbs liquid smoke. 3 tbs sugar-free maple syrup (I am pre-diabetic so feel free to use something else). 3 tbs vinegar. 4 tbs soy sauce. Then, “fry” them up like bacon on a skillet. A few minutes on each side is fine. Wait until the potato just starts to lightly burn, like in the photos above.
All the supplies, just about, ready for assembling. The beer is home brew.

Smoked Salmon and Vegan Bacon Arepa Filling

Cooking Time: 45 minutes

Ingredients

  • 1 small package of smoked salmon
  • 8 slices of sweet potato bacon.
  • a few slices of avacado
  • 1 tbs liquid smoke.
  • 3 tbs sugar-free maple syrup (I am pre-diabetic so feel free to use something else).
  • 3 tbs vinegar.
  • 4 tbs soy sauce.
  • Lettuce
  • Dressing of your choice. I used a lemon-dill dressing.

Instructions

After thinly slicing the sweet potato with the slicer blade on a grater, place the slices in a container with the smoke, syrup, vinegar, and soy. Let soak for a few hours.

Cook the sweet potato strips on a skillet. A few minutes on each side is fine. Wait until the potato just starts to lightly burn, giving the strips more of a bacon look.

Assemble arepa with a layer of dressing, “bacon”, smoked salmon, a bit more dressing, then the lettuce.
