I am pescatarian. The only meat I eat is fish/seafood. No pulled pork in these arepas. But that is no loss, as smoked salmon and “Bacon” will do just fine, thank you.
Ingredients
- 1 small package of smoked salmon
- 8 slices of sweet potato bacon.
- a few slices of avacado
- 1 tbs liquid smoke.
- 3 tbs sugar-free maple syrup (I am pre-diabetic so feel free to use something else).
- 3 tbs vinegar.
- 4 tbs soy sauce.
- Lettuce
- Dressing of your choice. I used a lemon-dill dressing.
Instructions
After thinly slicing the sweet potato with the slicer blade on a grater, place the slices in a container with the smoke, syrup, vinegar, and soy. Let soak for a few hours.
Cook the sweet potato strips on a skillet. A few minutes on each side is fine. Wait until the potato just starts to lightly burn, giving the strips more of a bacon look.
Assemble arepa with a layer of dressing, “bacon”, smoked salmon, a bit more dressing, then the lettuce.
