Delicious and Healthy Quinoa Arepa Recipe

When you have a “gizmo Jones”, like I do, you are always on the prowl for your next purchase. That’s how I discovered arepas, for you see, some people use a gizmo to make arepas. That would be a surprise to many in South America, their natural home.

So… I bought one. To be sure, you do NOT need one. A pan works just fine, though I must say, I like the way this machine creates an arepa that is as uniform and useful as an English Muffin.

Arepas do NOT have quinoa in them. Usually. As a person working to fight my pre-diabetic condition I added quinoa in an effort to lower the glycemic index. I must say, these really taste good. I made the quinoa in the Dash Rice Maker, another handy gizmo.
Toasty on the curves edges, too. Try that on a griddle.
For my first taste I made an egg and salsa verde arepa. Gizmos include egg ring and that handy electric Crepe Skillet. I use it almost every day, but haven’t made crepes in a couple of months. This skillet does SO much more. ????
