Mushroom Arepa Filling

Device: Holstein Housewares Arepa Maker.  You’ll need to use THIS Arepa recipe, too.

Mushroom Arepa Filling

Cooking Time: 90 miinutes

Ingredients

  • 4 Tablespoons Olive Oil, divided
  • 1/2 pound Crimini Mushrooms, medium dice
  • 1/2 pound Oyster Mushrooms
  • 1 Large Leek, cleaned and diced
  • 4 Green Onions, sliced
  • 2 Medium Carrots, minced
  • 3 Garlic Cloves, minced
  • ½ Cup Red Wine
  • 1.5 Tablespoons Red Wine Vinegar
  • 1 can of diced tomatoes.
  • 1 Tsp Cumin
  • 1 Tsp Mexican Oregano
  • 1/2 Tsp Salt
  • pinch of Black Pepper

Instructions

Heat 2 tablespoons of the olive oil in a skillet medium heat. Add the crimini mushroom and cook 8-10 minutes. After 4 minutes, add the oyster mushrooms. Remove from heat.

Add the remaining 2 tablespoons of olive oil to the skillet. Add the onions, leek, carrots, and garlic. Saute for 10-12 minutes.

Add the red wine, the red wine vinegar, tomatoes, cumin, oregano, pepper and salt. Cook 10 minutes or until most of the liquid is gone.

Add mushrooms and cook until most liquid is gone.

Slice arepa in half, and fill with this mushroom filling. Not so much it is spilling out all over the place, but don’t be skimpy.

Notes

Delicious. Use whatever kind of mushrooms you like most. Firmer mushrooms give a great texture, but most any will work.
