Device: Hamilton Beach Breakfast Sandwich Maker. Single or dual, though single will be a bit easier.
Low Carb/Paleo Sweet Potato Pancakes – Breakfast Sandwich Maker Version
- 2 slices bacon, sausage or
- Large pinch of grated cheese of your choice. A Sharp cheddar is great.
- 1 egg cooked to your preference
- 1 small, pre-cooked sweet potato
- 2 large eggs
- 2 T coconut flour
- 2 T unsweetened coconut milk
- 1 T coconut oil
- 1/4 t cinnamon
- 1/2 t ginger,
Place the pre-cooked sweet potato in the blender along with the raw eggs, coconut flour, coconut milk, cinnamon, and ginger. Blend until just combined, no more.
Pre-heat the unit.
Open the HB Breakfast Sandwich Maker so that only the bottom ring is on the lower heating surface. Be aware that the upper surface and the elevated rings will be getting hot, too. Don’t touch!
Put a few drops of coconut oil that lower level then pour about a quarter cup of the sweet potato batter onto the ring. Use a small spatula to even out the batter in the ring.
Sprinkle your choice of cheese into the egg, then cook 4-5 minutes.
As soon as your mini-pancake starts cooking, lower the egg ring and place one raw egg inside. Close the entire unit. Let the egg cook while the pancake cooks in the lower layer. Keep an eye on it, lifting the bottom of the pancake to test for doneness. CAREFULLY raise the rings as little as possible, and flip to cook for two or three minutes on the other side. Once done, remove and set aside. Pour in another pancake and repeat. Your egg should be sufficiently cooked to allow the ring to be lifted partially throughout the pancake cooking process. When all are done, set aside.
Raise all rings and cook the bacon/sausage or? on the lower heating surface.
Assemble the pancake sandwich by placing the egg and bacon on top of a sweet potato pancake. Then place another sweet potato pancake on top. Pour a dab of sugar-free syrup over the ingredients before placing the final pancake on top. Pour just enough for flavor, but not so much that you make a mess. Or, alternatively, make a mess and eat with a fork.
For the “Meat”, I like to make a thin layer of Gimme-Lean sausage, formed into the lowest ring with the back of a spoon. Cook, then raise the bottom ring, flip and cook again, keeping all rings up.
