Oh, my god, this is good, and it’s relatively healthy. You can prepare this as a diet item, or, go to town and top it with a “delightful to crack” burnt sugar topping. 50 percent of a low carb diet seems to be made up of eggs, so this is a tasty dessert that will work for that Keto diet line of thinking very well. You can use low-fat milk if you need to. And who doesn’t love ginger? Well, you wouldn’t be reading this if you did!
Ginger Egg Custard
Ingredients
- 2 medium eggs
- 1 cup milk
- 4 tbsp (50 g) sugar
- 2 tbsp ginger juice
Instructions
Get your steamer ready, as this will be perfect for it.
Grate ginger to get 2 tbsp juice. You can grate directly into the bowl/cup.
Mix the eggs, milk, and sugar in a bowl or wide mouth cup until sugar is dissolved.
Pour the egg mixture through a strainer into another bowl using a spoon or spatula to squeeze the ginger juice through.
Divide your custard-to-be between two serving bowls… then cover with plastic wrap or a square of aluminum foil.
Steam for 11 minutes or more
Notes
Optionally, you can sprinkle the top of each steamed custard with sugar, then, carefully, use a small blow torch to melt the sugar.
