Device: Dash Mini Waffle Maker
This is a simple recipe that should hit the spot on some early morning. Feel free to use ANY cheese, and I wouldn’t flinch if you used Ketchup and/or syrup on the inside. I use a low carb waffle mix for my mini waffles and they seem relatively dry. Ketchup and/or syrup would really help them. I suppose a couple thinly sliced tomatoes would work, too. OK… I did vegetarian bacon.
Yeah… I overcooked the veggie bacon.
Cheese and Egg Waffle Sandwiches
Ingredients
- 2 frozen round waffles (4-inch)
- 1 EGG, beaten
- 1 slice Colby/Jack OR American cheese or?
Instructions
Pre-heat oven/toaster over to 400°F. Place pre-made waffles on a baking sheet. Due to dripping egg, you can place them on foil or parchment paper.
Pour some of the WELL BLENDED egg over both waffles, filling all the indentations.
Bake at 400°F, taking it out of the oven when the waffles are crisp and the egg appears set. This should take about six or seven minutes… plus.
Place thinly sliced or shredded cheese over ONE waffle. Briefly place in broiler to melt. Place other waffle on top forming a sandwich.

The egg is baked into the inside of each waffle, but here some spilled out onto the top while in the toaster oven.
